Zucchini & Olive Oil Quiche
- 2 large zucchini's, grated
- 1/2 cup Talinga Grove Extra Virgin Olive Oil
- 3 rashers bacon
- 1/2 cup grated parmesan cheese
- 1 cup SR Flour
- 5 eggs
- salt and pepper to taste.
Mix all ingredients together in a large bowl, and place in baking tray. Bake at 180c for about 35mins until slightly brown on top. You can peel some strips of zucchini and crumble some goats cheese on top to make it a bit extra special!
