Prawns with Fennel Sauce
24 Large Green Prawns
MARINADE
120ml Talinga Grove Extra Virgin Chilli Oil
2 Cloves Garlic Chopped
1 Red Onion, Sliced
1 Red Chilli, Seeded And Chopped
2 Tbsp Chopped Fennel Fronds
1 Tsp Chopped Fresh Thyme
SAUCE
75ml Talinga Grove Extra Virgin Lemon Olive Oil
25ml Boiling Water
30ml Lemon Juice
2 Cloves Garlic, Crushed
2 Tsp Chopped Fennel Fronds
Wash
and dry the prawns and place them in a large shallow dish. Combine all
the marinade ingredients, except 30ml of chilli oil.
Whisk all the sauce ingredients together until thick.
Remove the prawns from their marinade and pat dry.
Heat the reserved oil in a large frying pan. Fry the prawns over a medium
heat for 3-4 minutes until pink and golden. Add 60ml (4tbsp) of the sauce.
Cover and simmer for 3-4 minutes until the prawns are cooked through.
Serve hot with the remaining sauce.
